DuPont introduces protective dairy cultures for fermented dairy products

DuPont Nutrition & Health has introduced HOLDBAC YM PLUS dairy culture as part of its DuPont Danisco range.
The Danisco range consists of a range of protective dairy cultures which seeks to improve bio-protection, nutritional profile and food quality with lower environmental impact.
The HOLDBAC YM PLUS is developed to provide a broader spectrum control of a wide range of fungal contaminants, like yeast and mold, in fermented dairy products. It seeks to fulfill specific needs of manufacturers who, despite the challenges of cold-chain logistics, want to avoid risking brand image due to product failure. Like other cultures in the DuPont Danisco range, it presents clean label credentials which are at the forefront of consumers' mind.
HOLDBAC YM PLUS contains a unique blend of selected and patented Propionibacterium and Lactobacillus strains which provides broader inhibition spectrum. This contributes to increased effectiveness in preventing spoilage from fungal growth, thus promoting longer lasting dairy products which retain freshness.
The dairy culture can simply be added to milk together with starter cultures.
In addition, they are suitable for various fermented dairy products such as yoghurt, quark, tvarog, white cheese and sour cream.
