Gringa Dairy introduces Mexican cheese in the UK
 
 

 

The founder of Gringa Dairy, Kristen Schnepp, is making Mexican cheese in London which uses only organic milk, which is sourced at a farmer-sustainable price from a farm in Kent.

 

Gringa Dairy is an urban dairy that specialises in creating artisan Mexican-style cheese from under a railway arch in Peckham.

 

Mexican food is on-trend, with Mexican and Latin restaurants popping up all over Greater London. However, chefs are reportedly frustrated by the lack of authentic dairy products, which, up until now, have been unavailable in the UK and are unable to be imported from the US or Mexico.

 

Gringa Dairy Queso Fresco is a soft, fresh cow's milk cheese that is a bit tangy and a little salty. This crumbly, versatile cheese, which is similar to feta, is one of the most common cheeses in Mexican cooking. Retail price is £20 (US$31.40) per kilogramme.
