3D Bio-Tissues has produced the world's first cultivated pork steak

BSF Enterprise, a UK biotech investment company, announced that its subsidiary 3D Bio-Tissues (3DBT) has successfully produced the first cultivated steak in the UK made from pork cells, Green Queen reported.
Using 3D Bio-Tissues' serum-free and animal-free cell booster, named City-mix, the resulting pork cutlet reportedly exceeded expectations in terms of appearance, taste, and texture. The 3DBT team cooked and tasted the filet.
According to the company, the cultivated pork filet is a world first, as other companies have only developed cultivated pork in the form of mince.
3DBT used pork cells to create the 3.5-inch by 1.5-inch steak, which is similar to a standard cut of meat.
City-mix is a low-cost growth factor that can boost yield without the use of animal-based foetal bovine serum. 3DBT said City-mix is an important IP component that provides clear competitive differentiation and world-leading technology.
Che Connon, CEO of 3DBT, said City-mix is helping to significantly reduce the cost of cultivated meat, to the point where it may become economically viable in the near future.
Connon said the company's "structure without scaffold" technology is helping to create cultivated meat that closely resembles traditional meat without relying on plant-based additives. The next stage of development will focus on producing a chef-ready product for public consumption.
The raw pork steak produced by 3DBT reportedly displayed visible meat fibres and structural integrity comparable to traditional meat in terms of consistency, elasticity, colour, and texture. The cooking process, including shrinkage, searing, browning, charring, and crisping, was similar to conventional pork, with an identical aroma. The company also said taste and texture of the final product was indistinguishable from pork.
