Minnesota turkey industry to tap on Chinese market

Minnesota's turkey growers are eyeing to introduce turkey to China as a high-value meat substitute for pork.

John Zimmerman, a Northfield turkey grower, said it is impossible to ignore the Chinese market as it is so huge with 1.3 billion people and 300 million in emerging middle class.

Rather than compete with pork, the Minnesota turkey industry aims to position turkey as high-value meat option.

The Minnesota group worked with Southern Yangtze University and Master Chef Tang, who has more than 30 years experience, to develop recipes that appeal specifically to Chinese diners.
