Hormone growth promotants make cattle meat tougher
Hormone growth promotants (HGP) used in cattle make meat tougher, according to extensive taste tests done by Australia's Beef Cooperative Research Centre.
The findings will be published in the Australian Journal of Experimental Agriculture.
While hormone implants may improve cattle's feed efficiency, the meat's taste can be compromised, added John Thompson, a meat science professor at the University of New England.
The difference in quality may not be detected in a beef burger patty, but will definitely be felt in high-end cuts such as for steaks, he added.
