Bulgaria among EU's largest caviar producer
Bulgaria is the biggest producer of caviar of sturgeon fish in the Balkans, ranked fifth or sixth in Europe.
At the moment, there is some over-supply at the world market, which leads to price cut in the generally expensive delicacy.
Speaking with FOCUS News Agency, Matey Mateev with the Aquamash company, member of the Bulgarian Agency for Fisheries and Aquaculture, explained that Bulgaria produces around 4-5 tonnees of caviar from sturgeon fish annually.
To be mature enough to produce caviar, the sturgeon fish has to be 10-15 years, Mateev said, adding that currently the world's biggest producers are the US, Italy and China.
