Today's birds have the potential to grow rapidly due to intensive genetic selection; so they are more susceptible to
stressors of the respiratory and circulatory systems. We look closer to these respiratory diseases which are the major
group of diseases affecting the birds.
Consumers take into consideration some other characteristics of pork for its quality, such as tenderness, besides the
leanness and quality of the muscle. We look at how tenderness is measured in this study.
